Wild boar is the wild ancestor of the domestic pig, known for its aggressive nature and large sharp teeth. Its similarity to store bought pork is merely semantic. The meat is darker in color with a tighter grain and its distinctive flavour carries a hint of its wild heritage. Wild boar is leaner and more flavourful, with a sweet, nutty, intense flavor.

Wild boar is fed wild grasses and grains in a free range, free choice environment. This meat contains much less fat than production pork making it a good substitute for any pork dishes. However, its lower fat content means that fast cooking is necessary to retain its moisture and distinctive flavor.  Like all game meats, wild boar should be cooked to medium rare to medium. Wild boar meat is known to produce white blood cells, thus enhancing your immune system.
